    The World’s Best Carrot Cake

    2 2/3 cups flour
    2 tsp baking soda
    2 tsp cinnamon
    1/2 tsp salt
    1/2 tsp ground nutmeg
    1/4 tsp ground ginger
    1 cup sugar
    1 cup firmly packed brown sugar
    1 cup buttermilk
    3/4 light olive oil
    4 eggs
    1 1/2 tsp vanilla
    1 lb carrots peeled & grated
    1 – 8oz can crushed pineapple (drained) 14oz can works as well
    1 cup chopped walnuts
    1 cup flaked coconut
    1/2 cup raisins

    Combine first 7 ingredients in a bowl, set aside. Combine sugars, buttermilk, oil, eggs and vanilla in a large bowl, stir until well blended. Add flour mixture, carrots, pineapple, walnuts, coconut and raisins, stirring until well blended. Grease and flour pans ( 2 round or 1 bundt or 1 rectangular pan). Pour batter into pans and bake at 350° until toothpick inserted in centre comes out clean (30min to 1 hour depending on pan). Remove from oven and cool on rack for 10 minutes. Remove from pan and cool completely. Spread with cream cheese frosting.

    Cream Cheese Frosting

    1/2 cup butter, softened
    1 – 8oz package cream cheese, softened
    1 – 16 oz package icing sugar
    1 tsp vanilla
    2 tsp grated orange rind (optional)
